Easy Cookie Recipes

I LOVE COOKIES!  


I truly think I could live on cookies!  
What is their origin?

Cookies appear to have their origins in 7th century AD Persia, shortly after the use of sugar became relatively common in the region.  Bakers would test the oven temperature by putting a small amount of batter in it, and this little amount eventually became the cookie we know today. They spread to Europe through the Muslim conquest of Spain. By the 14th century, they were common in all levels of society throughout Europe, from royal cuisine to street vendors.

The word "cookie" comes from the Dutch word koekje or koekie, which means "little cake"

Here are a few easy and quick recipes for cookies:



In NY we call them "Half Moon Cookies", other areas might refer to them as "Black and Whites".  These are so easy to make!


Prepare a boxed cake mix according to the direction on the package and then add 1 cup of flour and mix well.  Use a 1" or 2" cookie scoop and drop dough onto a cookie sheet, covered in parchment paper, 2" apart and bake at 350° for 10 minutes.  Let cool and frost one half with vanilla frosting and the other half with a chocolate fudge frosting.

 Butterscotch Cake Mix Cookies
  • 13.25 ounces Betty Crocker Butter Recipe Yellow Cake Mix
  • 1/3 cup melted butter 
  • 2 large eggs
  • 1 2/3 cup Butterscotch Chips {10 ounces}
  • Set oven to 350°.  Combine cake mix, melted butter {or oil}, and eggs in large mixing bowl, and mix with hand mixer or stand mixer until well combined.
  • Stir in butterscotch chips with large wooden spoon.
  • Line large baking sheets with parchment paper.
  • Scoop dough with 1" cookie scoop  and transfer to cookie sheet.
  • Bake on center oven rack for 10-12 minutes
  • Remove from oven  and transfer cookies to wire racks to finish cooling, and ENJOY! Makes about 5 doz.

These are not only tasty but so pretty:


 Jello Cookies
Makes 18 of each flavor
Preheat oven to 350'

Ingredients:
3 1/2 c flour
1 t baking powder
1 1/2 c butter, softened
1 c sugar
1 egg
1 t vanilla
4 3oz pkg jello - 4 flavors
food color

Directions:
Beat butter until creamy.  Add sugar and beat until fluffy. Blend in egg and vanilla.  Add flour and baking powder gradually.  Divide dough into 4 sections and stir in 2 Tbs of jello into each section and add 7 drops of matching food color to each section.

Shape into 1" balls.  Roll each into leftover jello.  Place 2" apart on parchment covered cookie sheets.  Flatten slightly with the bottom of a glass.

Bake 9 minutes and cool for 2 minutes on cookie sheet, move cooling racks.

Lemon Cookies


1 lemon cake mix

1 tsp baking powder.

2 eggs.

1/3 cup vegetable oil

1/2 tsp lemon extract

1 cup white chocolate chips

1 cup milk chocolate chips

Instructions

Preheat oven to 350° and line 2 baking sheet with parchment paper. 

In a small bowl whisk eggs, oil and extract and set aside.
In a medium bowl mix together cake mix and baking powder.
Add egg mixture to cake mixture and stir all together until all the lumps disappear.
Divide dough into two bowls and fold milk chocolate chips into one and white chips into the other.
Using a small cookie scoop, drop balls onto baking sheet. You will want your balls to be mounded.  Bake for 10 minutes. Allow to cool and then transfer to wire rack.
