Zucchini Chips

I bought too many zucchini at the Farmer's Market on Saturday so I made some "chips":


They were very easy to make and delish, too!
The trick is to slice them very thin!


You can sprinkle on any seasonings but these were very tasty:



Sprinkling with salt brings out the moisture:


These will shrink as the dry out!



Zucchini Chips

1 small zucchini

1-2 Tbs salt

1 tsp Green Goddess Seasoning

1 tsp Seasoning Salute

1 tsp Smoked Paprika

Directions:

Preheat oven to 225°

One small zucchini sliced into very thin slices (using a mandoline is best).  Lay out on waxed paper and sprinkle with salt to bring out the moisture. Meanwhile, mix together seasonings in a small bowl. After 20 minutes pat zucchini dry with paper towels and lay slices on a parchment paper covered cookie sheet,  Sprinkle with seasoning mix and bake in oven for 1 hour.  Flip chips over and bake for another 15 minutes.  Eat them plain or dip into Ranch dip!
