I like trying different shaped pasta, so this Riccioli was a new shape for me. It is perfect for pasta salad!
There's just two of us so I made up this quick salad for a side dish for dinner:
I chopped up a mini yellow pepper, 2 T red onion, 3 cherry tomatoes, and 4 slices cucumber. I had some frozen chives and parsley in the freezer and I added a few spices:
While the pasta was boiling, I added a few T of Balsamic Vinaigrette to the veggies and spices:
