LONDON BROIL MARINADE
4 garlic cloves, thinly sliced
1/4 cup extra-virgin olive oil
2 Tbsp. good-quality balsamic vinegar
2 Tbsp. soy sauce
1 Tbsp. Worcestershire sauce
Freshly ground black pepper
3/4 tsp. baking soda
1½–2 lb. London broil
Place meat a large zip bag. Mix all other ingredients well and pour over meat in the zip bag and marinate for at least 4 hours.
Directions for grilling:
Preheat grill to 500°
Place steak at 45° angle, close grill and let grill for 2-3 minutes until bottom is seared. Rotate. the steak for 90° and grill for another 2-3 minutes. Flip the steak over and repeat steps. Check Internal temperature, 130°-135° is perfect. Repeat steps until temp is met. Let sit for 5-10 minutes and slice thin across the grain.
