Easy Veggie and Cheese Flatbread

Veggie and Cheese Flatbread

Here's a good way to finish up the leftover veggies you might have.  You can alter this recipe using any cheeses that melt well and any veggies that cook quickly.


























I began with a thin Lavash Honey Wheat Flatbread on a parchment covered baking sheet.  I grated some cheese (I used bruschetta cheddar, but any kind will do):


This was my way to use up a few lone veggies in the fridge, anything goes.  

I used a 1/2 thinly sliced zucchini, one radish, thinly sliced and halved.....


....a leftover sweet orange pepper, sliced into rings....


and a slice of turkey chopped up!


I sprinkled some Trader Joe's Ranch seasoning and black pepper over everything:


I topped it off with some grated cheddar cheese....


....and some parmesan cheese, and baked it for 8-10 minutes in a 350° oven


I sprinkle fresh chopped parsley on top, but you can use chopped chives, too


You can drizzle a little balsamic over the top or eat it as is!


This was a colorful and delicious light lunch!
