I love Butternut Squash....

I LOVE squash and this is one of my favorites, second to zucchini.

This is the easiest way to cook Butternut Squash

Cut squash in half and scoop out seeds.  Add a tablespoon (or more) of butter into cavity:


Generously spoon some brown sugar (2+T) into each cavity and sprinkle with salt and pepper:


Add 1/2 c water into pan:


Cover with foil and bake for 1 1/2 - 2 hrs at 350°.


Scoop squash and melted butter out of shell and ....


...serve immediately!


It is DELISH!

  1. Oh yum - yes that sounds much easier than my method of peeling and chopping it before cooking on the stovetop in my cast iron skillet. Plus,with cooler temps, I will be able to use my oven more often! Butternut is one of my favorites!

  4. I have never eaten butternut squash, but this does look yummy. Here in the south most people tend to eat what I call crookneck yellow squash. And, of course, we have to add a little bacon grease to it:) We also enjoy squash casseroles but I can never seem to get mine quite right...therefore, I seldom make it. I have so been enjoying my little MC whisk that I won in your contest:) Have a lovely day! (We are having a gloomy, rainy day but I LOVE IT because we have been dry for so long now!!!!)
