I LOVE squash and this is one of my favorites, second to zucchini.
This is the easiest way to cook Butternut Squash
Cut squash in half and scoop out seeds. Add a tablespoon (or more) of butter into cavity:
Generously spoon some brown sugar (2+T) into each cavity and sprinkle with salt and pepper:
Add 1/2 c water into pan:
Cover with foil and bake for 1 1/2 - 2 hrs at 350°.
Scoop squash and melted butter out of shell and ....
...serve immediately!
It is DELISH!
Oh yum - yes that sounds much easier than my method of peeling and chopping it before cooking on the stovetop in my cast iron skillet. Plus, with cooler temps, I will be able to use my oven more often! Butternut is one of my favorites!
ReplyDeleteA favorite here as well. Love the ease of your recipe, I certainly will try it Patti.......
ReplyDeleteI love butternut, too. I just picked up two large ones to make squash soup...yum...tomorrow I have promised myself I will do it! xo Diana
ReplyDeleteI have never eaten butternut squash, but this does look yummy. Here in the south most people tend to eat what I call crookneck yellow squash. And, of course, we have to add a little bacon grease to it:) We also enjoy squash casseroles but I can never seem to get mine quite right...therefore, I seldom make it. I have so been enjoying my little MC whisk that I won in your contest:) Have a lovely day! (We are having a gloomy, rainy day but I LOVE IT because we have been dry for so long now!!!!)
ReplyDeleteYum!!! I do have trouble cutting it though, usually buy it already cubed, but this sounds wonderful!

I haven’t fixed butternut squash this year yet. I will try your way, Patti. I do love it with butter and brown sugar!
ReplyDeleteHi Patti, oh I love butternut squash and I mom used to make acorn squash too all the time in the fall. This would make a perfect side dish for Thanksgiving. Thanks for the recipe and for visiting my blog and your sweet comment on my fall decor and recipe. Have a nice week. Julie xo
ReplyDeleteVery easy recipe and so yummy. Like Julie suggested, a great side dish.
