Mummy Sandwich for Halloween....

This is a quick and easy baked sandwich to make for lunch or dinner.

Simply buy a can of crescent rolls, lay it out flat and pinch seams together.
Slice leftover cooked steak into thin slices and lay it down the center.  Cut about 15 slices on each side of the crescent roll almost to the steak.  Fry up some peppers, onions and garlic and lay on op of steak:


Sprinkle with cheese - I used a variety: mozzarella, cheddar and herbal:


criss cross each slice of dough, over the meat and veggies and brush with egg...


...top with a little parmesan...


...and bake for 22-25 min at 350'.

A little of "this and that" from October....


October flew by quickly and we enjoyed some of the cooler weather!  Here is a recap of the last few weeks:

I picked the last of the summer roses....


...we picked out our pumpkin from the local farm...


..and I did a little fall decorating...


...we picked lots and lots of apples...


...and enjoyed a few rides to take in the foliage...


...I picked the last few tomatoes from my garden...


....we enjoyed the beautiful fall sunrises over the pond in the mornings...


....there's been lots of football-watchin' and snacks by the TV....


...and baseball world series games...


... fun times and trickery moments were spent with the "littles"...


...and precious time was spent with 4 generations....and ONE little "pumpkin" on the way!!


...and we "showered" our youngest with lots of gifts for grandson #3...


...we enjoyed some "specialty" drinks to take off the chill of cool afternoons...


...and mornings!!!....


....I enjoyed setting the table for fall meals....


...with pumpkins and autumn flowers....


...and cooking delicious fall meals...


...with some favorite recipes...


...and here is a recipe for one of my favorite fall side dishes:

CHEESY-GARLIC SPAGHETTI SQUASH

Cut a small to medium spaghetti squash in half and scoop out seeds.  Microwave in a pan with 1/2 water about 15 minutes until tender.  Scoop out "squash noodles" and immediately stir in one crushed clove of garlic and 1/4 cup parmesan-reggiano cheese.  Place in a casserole dish and sprinkle a few tablespoons of mozzarella cheese on top.  Bake for 20 minutes at 350'


It was a busy October and it certainly flew by quickly!

I love Butternut Squash....

I LOVE squash and this is one of my favorites, second to zucchini.

This is the easiest way to cook Butternut Squash

Cut squash in half and scoop out seeds.  Add a tablespoon (or more) of butter into cavity:


Generously spoon some brown sugar (2+T) into each cavity and sprinkle with salt and pepper:


Add 1/2 c water into pan:


Cover with foil and bake for 1 1/2 - 2 hrs at 350°.


Scoop squash and melted butter out of shell and ....


...serve immediately!


It is DELISH!

Apple Fritter Bread....

We just picked 28 lbs of apples over the weekend and I have been anxious to make Apple Fritter Bread !! 


The recipe (at bottom of post) has only a few ingredients!



















                   I tweaked the recipe I found on line and it was delish!!

Apple Fritter Bread

  • 2 (8 count) packages of cinnamon rolls
  • 1/4 cup (1/2 stick) unsalted butter, melted
  • 1/4 teaspoon vanilla extract
  • 1 large Empire apple, peeled and grated (I suggest using 2)
  • 2T cinnamon sugar
  1. Preheat oven to 350°F and grease a loaf pan with butter or nonstick spray. Set aside.
  2. Remove cinnamon rolls and icing from package. Set icing aside for for drizzling later.
  3. Take each cinnamon roll and flatten it out until it becomes flat like a pancake and lay them out on a silpat or parchment paper-lined work surface.
  4. In a small bowl, whisk together the melted butter and vanilla until thoroughly combined. Brush the butter mixture evenly over each flattened cinnamon roll and then top with grated apples. Sprinkle with cinnamon sugar.
        Stand loaf pan on its end and stack each flattened roll on top of              each other, stacking the vary last one upside down so that apples          don't touch the end of pan.
  1. Cover tightly with foil and bake for 30 minutes. Remove foil and bake for 15-20 minutes more.
  2. Remove to a wire rack and let cool 10 minutes before removing from pan.
  3. While loaf cools, pour both cups of icing into a bowl and microwave for a few seconds, making it soft enough to drizzle over cooled loaf and enjoy!
