One of my summer goals is to try new recipes or ideas in the kitchen a few times a week and I have been quite successful so far. A few days ago we had a pork roast, so with the leftover I made a Pork and Pineapple Flatbread and it was delicious!
I gathered my supplies:
It was quite simple to make:
2 flatbreads
2 cups chopped leftover pork roast
3/4 can pineapple chunks
1/4 c chopped red onion
3 oz Bruschetta Jack or Pepper Jack cheese, grated
3 oz cheddar or mozzarella cheese grated for topping
Lay flatbreads on cookie sheet. Cover the flatbreads with the Bruschetta Cheese to act as a "glue" and then top each with the pork, pineapple, onion. Sprinkle with cheddar or mozzarella. Bake in 400° for 6-7 minutes (longer if you have thick flatbread) until edges are slightly crispy. Slice and serve hot.
Optional: A drizzle of balsamic adds a nice flavor!
This is perfect for a light lunch or dinner or even an afternoon snack!
