Chicken Salad -- a variety of ways to eat and serve...

I love chicken salad and I often prepare it a variety of ways!
Whenever we bake or grill chicken, I usually make some extra for chicken salad.

Chicken, red onion, apples and mayo is delish on a crescent roll....

...chicken, walnuts, pineapple and mayo is perfect in a grilled wrap....

...chicken, celery, scallions and mayo makes a quick lunch...

...and always tastes better in a cute bowl or dish...

....served in a mound, using an ice cream scoop, on a bed of lettuce...

...or served in a vintage milk glass bowl...

...with chicken, grapes, celery, walnuts and mayo with Florida seasoned pepper...

...or sprinkled with a tomato-cheese seasoning...

...or loaded with lemon pepper...

....and I love chunks of chicken mixed in with chopped salad and chipotle dressing....

...and chicken salad is so easy to make to serve as an appetizer at a party...
...just use disposable cups and forks for a quick clean-up!

What is your "go-to" recipe for leftover chicken?

Halloween Happy Hour....

I couldn't resist these napkins - they are perfect for Happy Hour!

The table is set for 2 - chocolate and cheese will be served for snacks....along with some red wine...

...as long as I can get the mice to scurry away!

I adore the new Witch's Hat from MacKenzie-Childs...

with this cute lil spider...

...and my 'Cocktails Anyone' sign from Drooz in Skaneateles:

Happy Hour is all set up...want to join me?

Better hurry up before that mouse snatches the chocolate!!

Too late!!

I think I "need" these new little canapés plates from Mackenzie-Childs:

They will be perfect for Happy Hour!

Halloween luncheon table....

Today I have set the table for a quick, simple lunch for 2...

...fruit salad and grilled cheese sandwiches....

I layered with Pier 1 Imports pumpkin chargers, MacKenzie-Childs Courtly Check dishes, Signature fruit dishes and Wegman's harlequin flatware!

The centerpiece is a black tree decorated with old keys and the wine glasses are from the Dollar tree, however I painted the stem and bases with enamel paint:

Little black mice have their tails curled around the napkins...

...but it looks like one has escaped!

Fun with a waffle maker....

I have this "mini" waffle maker and it has been in the cupboard for years!

Today I was baking cupcakes and wondered if some of the batter would cook well in the waffle maker:

They came out great!  I am not sure why I never tried this before!

They make a perfect base for ice cream sundaes!

One scoop of ice cream, a drizzle of caramel sauce, a dollop of whipped cream and a few sprinkles!!

A little hot toddy to take the chill off.....

Vodka has always been my "choice of drink",  probably because it has no flavor.
And then they came out with flavored vodkas!
Which made the taste of a drink even better!

So, when I saw peppermint vodka, I immediately thought of adding it to hot cocoa!

And I have to admit...it is tasty and certainly takes the chill off on a damp, cold afternoon!

ENJOY!
