Jenna @ The Painted Apron has fabulous recipes and beautiful presentations of her foods! I saw this recipe and wanted to try it, however I decided to work with what I already had in the house!
Here is the recipe that gave me the inspiration: Jenna's Cheesy Chive Potato Crowns
But I added my own flair - because I was too lazy to go to the grocery store!
CHEESY POTATO MOUNDS:
2 cups frozen shredded hash browns, thawed
1/4 c green pepper , chopped
2 oz shredded asiago cheese
1 oz cheddar cheese, shredded
1/4 t. Garlic seasoned pepper
1/8 t. Jalapeno seasoned salt
1 t. olive oil
Toss ingredients together in a mixing bowl. Spoon into well greased mini muffin pans, pressing mixture down with fingers or the back of a spoon. Bake at 350 for 30 minutes and check potatoes. Continue to bake until golden and edges are crispy. Carefully remove from pan and serve warm
Note: a silicone pan makes for easy removal and I used an egg shaped silicone pan
