I LOVE squash.
All kinds of squash.
I think it's one of the best things about fall!
Spaghetti squash couldn't be any easier to prepare:
I cut it in half, salt and pepper it and place it cut-side down in a baking dish that has enough water to coat the bottom of the pan and microwave it. After 15 minutes I flip it over, shred with a fork and it's ready to eat!
BUT
Why have plain ol' squash when you can give it more flavor?
I crushed a clove of garlic thru a garlic press, added 2 T butter, a few red pepper flakes and some Roasted Garlic Pepper (found at Hey Rose) and microwaved it for 90 seconds and let it sit for 5 min.
I removed the squash from the shell and mixed the butter into the squash, tossing and tossing...
...and placed it back into the shell...
...and topped it with some grated cheddar...
....and fresh chives...
...and baked it for 10 min at 425'...
...and enjoyed every little bit!

OOOOHH! This could ALMOST make me happy about Fall lol. I love squash too -- I love that it can be a meal in itself and it's such a great comfort food.
ReplyDeleteWell, thank you, my mouth is watering now! That looks and sounds amazing. I just discovered spag. squash, well I had heard about it but just tried it. I cooked mine in the crock pot, and I cooked it a bit to long. I has some sauce that I poured over it but yours sounds WAY better. Thinking I might just have to give this a try. Thank you for sharing.
