I mixed up a batter of a "copy cat" recipe and made 8 large ones and 2 dozen smaller ones.
I decorated them with patriotic sprinkles:
CRUMBL "Copy Cat" Sugar Cookies
1 1/3 c salted butter, softened
1 c sugar
1/3 c powdered sugar
2 1/2 t baking powder
1 t salt
3 egg whites
2T heavy cream
1 1/2 t vanilla
1/2 t almond extract
3 2/3 c flour
frosting
- Preheat oven to 350°. Line 2 cookie sheets with parchment paper
- In a large bowl beat butter for 30 seconds. Add both sugars, baking powder and salt and beat until fluffy. Add egg whites, heavy cream, vanilla and almond extracts and beat until combined. Beat in flour.
- Drop dough in 1/2 cup portions, 3" apart, flatten each mound to 1/2 thick and 3 1/2" diameter on cookie sheets. Bake 13-14 minutes until edges are set. Cool on cookie sheets for 2 minutes and cool completely on cooling racks.
