Here is an easy way to prepare two summer mocktails or cocktails, using fresh mint:
I make a batch of Strawberry Mint Simple Syrup cubes to save on time:
1 c cut up fresh strawberries
1 c water
1 c sugar
Bring to a boil and remove from heat.
Add a handful of torn up fresh mint (or basil) and cool. Mash lightly with a fork.
Pour into ice cube trays or mini muffin cups and freeze.
Remove and store in a zip bag.
Strawberry Mint Lemonade
Fill glass halfway with ice cubes
1 melted cube (recipe above)
1 shot vodka or rum
Fill with sparkling or plain lemonade
Garnish with a strawberry and/or mint leaves
(Leave out liquor for a mocktail)

Strawberry Mint Mojito
Fill glass halfway with ice cubes
1 melted cube (recipe above)
1 shot vodka
1 large lime wedge, squeezed well over ice
Fill with soda water
Garnish with a strawberry, slice of lime or mint leaves
(Leave out liquor for a mocktail)
