Cheesy Cornbread Stuffed Apples
Here's a delicious afternoon snack or a side dish for dinner - perfect for fall when the apples are fresh and ripe!
- 1 large baking apple
- 1/4 cup sharp cheddar cheese
- 1/4 cup crumbled cornbread
- 2 T diced celery
- 1 T chopped fresh chives
- 1 t fresh thyme
- salt and pepper
- 1 T extra virgin olive oil
- 1/4 cup apple cider
Halve and core a large apple (I used Honey Crisp) and trim the uncut side so each piece sits flat. Scoop out the flesh, leaving about 1/4 inch for stability, and chop it up
Combine the flesh with: 1/4 cup cheddar cheese (I used half chili pepper and half sharp), 1/4 cup crumbled cornbread, 2 T diced celery, 1T chopped chives, 1t fresh thyme, salt and pepper and 1t olive oil. Fill the apple halves with the stuffing and place in a small baking dish. Pour cider into the bottom of baking dish. Cover with foil and bake for 20 minutes at. 425°. Uncover and bake 10 more minutes. Serve hot.
