Charcuterie Bread Bites

This idea was a lot easier and quicker than setting up a charcuterie board:

This recipe calls for two cans of biscuits, each individual biscuit cut into quarters:



It is loaded with cheeses, pepperoni, pepper and onion:



and fresh herbs....


....and minced garlic:


It was tossed all together:


And then mixed together with cut up biscuits and placed in greased Bundt pan and baked:


After baking for 45 minutes:





You can pull it apart with your hands or flat tongs:


This was a delicious appetizer and I will be making it again!!

Charcuterie Bread Bites
  • 6 ounces pre-shredded mozzarella cheese, about 2 cups
  •         1/2 c pepperoni slices, cut into sixths
  •   4-5 ounces fresh Parmesan cheese, grated (about 1               cup), plus 2 T for garnish
  •         2-3 T green pepper, minced
  •         2 T red onion, minced
  •         2 oz Cheddar cheese (I used smokey flavor)
  • 1/4 cup chopped fresh basil, plus more for garnish
  •         3 T chopped fresh flat-leaf parsley
  • 2 T chopped fresh oregano
  • 2 T olive oil
  • 2 t fresh garlic, minced or grated
  • 2 12-16-oz. cans refrigerated biscuits
  • 1 cup marinara sauce, warmed

Preheat oven to 325°F. Stir together mozzarella, pepperoni, onion, green pepper, cheddar cheese, Parmesan, basil, parsley, and oregano in a large bowl.

In a small bowl, combine oil and garlic; drizzle over cheese mixture.

Cut biscuits into quarters  (use kitchen scissors). Add dough pieces to the cheese mixture and gently toss.

Prepare a nonstick Bundt pan with cooking spray. Add the biscuit mixture to the pan.

Bake for 45-50 minutes until top is golden and a wooden pick inserted into the center of a biscuit piece comes out clean.

Allow the bread to cool in pan about 5 minutes. Remove from pan, and garnish with additional Parmesan and fresh basil leaves. Serve on a platter with marinara sauce.

  3. This is absolute GENIUS, and it looks delicious. I’m sure that you didn’t have any left, so you don’t know how it freezes. I’m inclined to make one of these, cut it into slices, and freeze it so that I can pull some out every time I have soup or a salad. My mouth is watering. Looking at these pictures.
