If you are going to Teresa Guidice's for Easter, don't bring these cookies - we all know what happened to Melissa's Sprinkle Cookies one Christmas Day!
Easter Sprinkle Cookies. (makes 8 doz)
8 ounces cream cheese
1 cup unsalted butter
2 cup granulated sugar
2 eggs
1 Tablespoon vanilla
3 1/2 cup all-purpose flour
1 tsp baking soda
1 tsp salt
1-2 cup Easter sprinkles or jimmies
Preheat the oven to 350°.
Line 2 baking sheets with parchment paper and set it aside.
Cream together cream cheese, butter, and granulated sugar until light and fluffy. Add eggs and vanilla and mix until creamy. Add the flour, baking soda, and salt, a little at a time and mix until well combined. Chill dough for 30 minutes.
Using a small cookie scoop, scoop up dough and drop into sprinkles, pressing one side firmly to hold the sprinkles.
Pick up and place sprinkle side up on the parchment-lined baking sheet. Space cookies about an inch apart on the sheet and bake 10-12 minutes. Makes about 8 dozen.
