This is a perfect cake mix for St Patrick's Day (or "Pirish" in our family). The recipe is from Taste of Home and is one of my favorite cakes to make!
Cake ingredients:
1 yellow cake mix
2 pkgs instant pistachio pudding mix
1 cup water
3/4 c oil
4 eggs
- In a large bowl, combine the cake mix, pudding mixes, water, eggs and oil; beat on low speed for 30 seconds. Beat on medium for 2 minutes.
- Pour into a greased and floured 10-in. fluted tube pan. Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
- Glaze: 1 c confectioners sugar, 1 T softened butter, 2-3 T milk
- In small bowl, combine the glaze ingredients, adding enough milk to reach desired consistency. Drizzle over cake.
- I took the lazy way out and just melted some canned frosting and drizzled it over the cake! I also added a little green sugar.

The cake looks delicious and love your presentation. If I made the cake, I'd need to give it to a friend. Sweets here disappear quickly!
