What do you do with leftover cranberries from the holidays?
They can last up to a month in the refrigerator! I had a bag leftover, so I made some sugared cranberries:
Sugared Cranberries
- In a small saucepan, simmer 1/4 cup water and 1/4 cup sugar for 3 minutes.
- Stir in 1/2 cup cranberries to coat then remove from heat and stir another 1 minute.
- Remove cranberries with a slotted spoon and transfer to a parchment-lined baking sheet and dry out for 1 hour.
- Roll sticky cranberries, 10-12 at a time, in 1/2 cup sugar to coat.
Keep them refrigerated and you can snack on them.....

Of course you can make cranberry sauce, jelly, cranberry brie bites, cranberry muffins, stuffing, and cranberry bread, too!
I make these all the time (or at least till cranberries stop appearing in the stores) and keep a tub of them in the freezer for just munching or decorating. They're so good frozen and sometimes one or two is all you need as a palate cleanser or a bite to satisfy! I'm glad you posted this so others can discover them!
