When I roast little potatoes, I always make a few extra for an afternoon snack the next day! Before roasting these potatoes, I tossed them in a plastic bag with some olive oil, parmesan cheese, Everything But the Bagel seasoning blend, salt and pepper and roast at 400'
I had 4 leftover and hollowed each out. I filled each half with a little leftover wilted spinach...
...and topped with a little grated cheese...
This time I used Caramelized Onion Cheddar!
And then I sprinkled a little more seasoning on top and placed them under the broiler for a few minutes.
Potato Bites
6 Leftover, halved, roasted, mini potatoes
6 T wilted spinach
6 T cheddar cheese
Everything But The Bagel seasoning
Cheddar Cheese (Caramelized Onion or Pepper Jack)
Hollow out each potato half and fill each one with 1 T wilted spinach and top with cheese. Sprinkle seasoning on each one and broil to heat potato and melt cheese. Serve immediately.
Another idea: Fill each potato with leftover crumbled bacon and cover with Bacon Cheddar cheese
These are a perfect little afternoon snack!
