Christmas Cookie Cups....




Christmas Cookie Cups
  • 1 1/4 unsalted butter - softened
  • 1 1/2 c powdered sugar
  • 1 t baking powder
  • 1/2 t salt
  • 1 egg
  • 1 t vanilla extract
  • 2 1/2 flour
  • 1/2 c red, green and white sprinkles
  • vanilla frosting

  1. Preheat oven to 350'. Grease mini muffin pans.
  2. In a bowl, add the butter and beat with a mixer for about 1 minute. Add the powdered sugar, baking powder, and salt. Beat until creamy, scraping the sides of the bowl.
  3. Beat in the egg and vanilla. Then add in the flour until just combined.
  4. Stir in sprinkles
  5. Shape the dough into 1-inch balls. Press the balls into the greased mini muffin pan. Press each dough ball with your thumb to create an indentation.
  6. Bake for 8-10 minutes or until the edges are light brown. Remove from the oven and press the centers with the rounded side of a measuring teaspoon. Cool in pan for 5 minutes. Then remove to finish cooling on a wire rack.
  7. Spoon canned frosting into a piping bag with star tip and pipe onto each cookie, top with a few sprinkles.

  1. Oh these look so festive and yummy and easy! I can see the kids gobbling these up before anything else! Happy baking! It feels like all we are doing is partying, so hard to get anything else accomplished!
