Fairy Bites are an easy shortbread cookie to make and they are delicious with a cup of tea or coffee!
Fairy Bites
1/2 c butter, softened
1/4 c sugar
1/4 t almond extract
1 1/4 c flour
1/4 t salt
4 T nonpareils
Heat oven to 350°. Line an 8x8" pan with parchment, with overhang as pictured above.
Combine butter, sugar and extract and beat at medium speed until creamy. Add flour and salt and lower mixing speed. Stir in nonpareils. Knead dough and press into pan. Lift dough out of pan and cut into bite size squares, see below.
Bake on parchment or ungreased pan for 14 minutes or until edges are lightly browned.
I cut off the edges to square up the dough neatly and then used the cut off edges to make little round bites.
These are a quick cookie to make at the last minute ....
....they can be bagged up and added to a cookie tray...
