Cheesy Potatoes in Onion Rings



Be creative, add a different flavor of cheese, or different seasonings.  Here's how I made them, but each time I have prepared them a bit differently!

Boil and mash:
2 large potatoes
Mix the following in a medium bowl while potatoes are boiling:
2 T Smoked Gouda w/ Bacon, grated (or your favorite cheese)
2T butter grated
1 egg
1 t dry vegetable seasoning
1 t dry ranch seasoning
1 t red pepper flakes, crushed
1 t fresh chopped chives
2 T milk
Add mashed potatoes to the bowl and mix well. 
Cut 6-8 large onion ring slices, 1/2” thick, separated. Place on Parchment covered cookie sheet.  Scoop large spoonfuls of potato mixture into each onion ring and bake at 400° for 15-20 minutes until potatoes have golden brown tops,  Serve hot.

  1. YUM, how could it not taste amazing with that cheese?! This would be a good way to serve mashed potatoes for the holidays, too.
