Are you looking for an easy weeknight dinner ? This is so simple to put together and has lots of flavor. You can add more veggies if you like, or use a different type of sausage!
Kielbasa and Veggie Medley (serves 2)
1/2 c thickly sliced red onion
2 cups baby potatoes, cut in half
1 cup fresh broccoli florets
1 large carrot, peeled and cut into stix
2 T extra virgin olive oil
2 T grated parmesan cheese
1 t Italian seasoning
1/2 t spicy steak seasoning
1/2 t salt and pepper
1 1/2 cups sliced kielbasa or precooked sausage
In a large plastic bag add all ingredients except for kielbasa. Toss and marinate for 1/2 hour. Spread out on a parchment covered cookie sheet and add kielbasa.
