Here's an easy butter cookie recipe, not too sweet at all, and perfect to enjoy with a cup of coffee or tea!
Citrus Butter Cookies
Ingredients:
1 c softened butter (2 sticks)
1 1/4 c confectioner's sugar
2-3 teaspoons grated orange peel
1 t salt
4-6 drops red food color
1/4 c orange juice
1/4 c Sprite
1 1/2 c flour
Directions: Preheat oven to 350°. In a large bowl cream together butter, sugar, orange peel, salt and food color. Mix sprite and OJ together and alternate it with flour , mixing it into creamed mixture. Transfer dough into a pastry bag with a circle tip and pipe dough into 1"to 2" circles onto a parchment paper covered cookie sheet. Bake 8-10 minutes, cool for 2 minutes on cookie sheet, remove to wire racks to complete cooling.
I made 1" circles and baked for 8 minutes as I wanted mini cookies!
You can also use a 1" cookie scoop, adjusting the baking time for 2-3 more minutes:
You can also omit the food coloring or add a different color!
Citrus desserts are the best, I assume these get their lift fron the soda in the Sprite. I make a lemon-orange loaf cake with both juice and peel, always add a peeled finely grated small zucchini squash to the batter which makes it moist.
