It can't get much easier than these cookies made with cake mixes:
Fruity Pebbles Cake Mix Cookies
INGREDIENTS:
1 box (13.25 oz) vanilla, white or yellow cake mix
(if using 15.25 cake mix, remove 4 T)
2 large eggs
1/3 cup canola or vegetable oil
2 cups Fruity Pebbles cereal (divided: 1 1/2 c and 1/2 c)
INSTRUCTIONS:
Preheat the oven to 375℉. Line two rimmed cookie sheets with parchment paper and set aside.- In a large mixing bowl, using an electric mixer, beat the cake mix, eggs, and oil until well combined.
- Stir in 1½ cups of Fruity Pebbles cereal until combined.
- Place the remaining 1/2 cup Fruity Pebbles into a separate small bowl.
- Use a 1” cookie scoop to scoop the cookie dough out of the bowl. Dip the top of the cookie dough ball into the remaining Fruity Pebbles. Then arrange them onto prepared cookie sheet (12 cookie dough ball per cookie sheet)
- Bake 9-11 minutes and allow to cool for a few minutes on cookie sheet
- Makes 40 cookies
- 13.25 ounces Betty Crocker Butter Recipe Yellow Cake Mix
- 1/3 cup melted butter
- 2 large eggs
- 1 2/3 cup Butterscotch Chips {10 ounces}
- Set oven to 350°. Combine cake mix, melted butter {or oil}, and eggs in large mixing bowl, and mix with hand mixer or stand mixer until well combined.
- Stir in butterscotch chips with large wooden spoon.
- Line large baking sheets with parchment paper.
- Scoop dough with 1" cookie scoop and transfer to cookie sheet.
- Bake on center oven rack for 10-12 minutes
- Remove from oven and transfer cookies to wire racks to finish cooling, and ENJOY! Makes about 5 doz.
1 lemon cake mix
1 tsp baking powder.
2 eggs.
1/3 cup vegetable oil
1/2 tsp lemon extract
1 cup white chocolate chips
1 cup milk chocolate chips
Instructions
Preheat oven to 350° and line 2 baking sheet with parchment paper.
In a small bowl whisk eggs, oil and extract and set aside.
In a medium bowl mix together cake mix and baking powder.
Add egg mixture to cake mixture and stir all together until all the lumps disappear.
Divide dough into two bowls and fold milk chocolate chips into one and white chips into the other.
Using a small cookie scoop, drop balls onto baking sheet. You will want your balls to be mounded. Bake for 10 minutes. Allow to cool and then transfer to wire rack.
