4 oz butter, softened
1 clove garlic, minced
1/4 t smoked paprika
1/4 t Italian seasoning
a few sprigs parsley, minced
2 basil leaves, minced
Mix all together and press into butter molds, freeze overnight, release from mold and store in refrigerator in a zip bag until ready to use.

I simply make a salad with lettuce, red onion, cucumbers, tomatoes, celery and carrots. I fry up a pound for ground beef and add taco seasoning and scoop a pile on top of salad, adding some sour cream, salsa and shredded cheddar! Don't forget the Chili Fritos around the edges!

I baked a white cake and had 4 egg yolks leftover, so I made mini quiches with leftover ham, onion, green pepper and cheese. I store them in the freezer and can simply pop one into the microwave on a busy morning!

I have 4 bunches of Butter Crisp lettuce in my garden so our salads have been so fresh!!

All of that looks so good! Its so hot here lately, it kind of zaps your appetite. I think I will start making more cold foods like fruited chicken salad to eat on mini croissants. I'm also using the stovetop to make Creamy Pesto Shrimp and linguini, and Skillet Stuffed Bell Peppers.
