Try this quick and easy side dish. Its a terrific change from the more traditional green bean casserole!
Corn and Green Bean Casserole
1 can green beans
1 can corn
1 cup shredded sharp cheddar cheese
1/2 chopped onion
1 cup sour cream
8 oz can sliced water chestnuts
1 can cream of celery soup
1/2 cup melted butter
1 sleeve Ritz crackers, crushed
(I used Cheeze-its)
Spread green beans and corn on bottom of ungreased 13x9" baking pan. I a medium bowl, mix cheese, onion, sour cream, water chestnuts, and celery soup. Spread this mixture over the vegetables. Combine crushed crackers and butter and sprinkle over the top. Bake at 400° for 40 minutes. Serves 6

I do a very similar casserole that is a family favorite. It's a recipe handed down from my mother. The Ritz cracker topping makes it even better.
