Snow and a hearty Hamburg Soup


When I saw the band of snow heading our way, I knew it would be a good day to make soup

These photos were taken only moments apart.  The left photo shows the band of snow heading toward us from the north and the right photo shows the snow beginning, only a few minutes later!

So, I decided to make a hearty soup for dinner!

Hearty Hamburger Soup

 

1 pound ground beef

1 large onion

3 chopped celery stalks, (chop the green tops, too)

3-4 carrots, sliced

2 medium potatoes, 1/2” diced

1 28 oz. can chopped tomatoes

3 10 oz. cans beef broth

2 cups water

1 10.75 oz. can condensed tomato soup

1 tbsp. parsley

1 tbsp. Italian seasoning

1 tsp. minced garlic

Salt &Pepper to taste

Fry ground beef, drain and add to large soup pot with all other ingredients.  Bring to a boil for 15 minutes then drop temperature to a simmer for 20-30 minutes (check for carrots/potatoes to be cooked)



I also baked some quick bread squirrels and acorns!!


AND THEN.....the sun came out again!  We have the strangest weather in Central NY!

  2. That soup looks so good! I think could survive on soups and stews all winter long. I tried a new recipe recently, a coconut milk/lime chicken soup, suggested from Hello Fresh (you can get so many meal ideas from their site!)...we really liked it. We didn't get any snow from this latest Lake Effect, but my son, as well as two of my daughters, live up in Oswego, and they got a bit! It was cold yesterday though, with that wind.
