Bacon-Cheddar Apples

Bacon-Cheddar Apples are a perfect side dish for a brunch:


 This recipe serves 4:
2 large apples, halved and cored
1 T melted butter, plus 1 T cold butter, grated
1/4 cup Panko crumbs
1/4 cup cheddar cheese, grated
2 slices bacon, cooked and crumbled
optional: sour cream and chives for topping

Preheat oven to 350°
Half and core each apple and cut score the skin in a crosshatch pattern.  Place each half in a muffin tin or ramekin, cut side up and brush with melted butter.

Blend the cold butter, Panko and cheese and sprinkle half by mounding equally among the apples. 

Add crumbled bacon, and then add the remaining cheese mix.  Bake for about 25 minutes.


You can always add a little more cheddar cheese during the last few minutes and place them under the broiler to crisp the cheese a bit!


Feel free to add a dollop of sour cream and a few chopped chives!


This can also be served as an appetizer as well as a side dish:


 Mmmmm - delish!
