These little quiches are so easy to make for a brunch, breakfast on the go, or even for lunch with a salad!
The recipe is simple and can be altered easily for your personal taste:
Eggs, milk, cheese and what ever you want to add.
Anything goes!
Try cooked, crumbled sausage, spinach, chopped zucchini, crushed garlic, crumbled bacon, flavored cheeses, jalapeno peppers, finely shredded carrots - be creative!
I made these with chopped broccoli, green pepper, tomato, onion and chives:
I bake them in silicone cups, and when baked, they slide out of the cups very easily.
Making a large batch at once and then storing them in zip bags in the freezer is a way to always have 'breakfast on the go' - just pop a few into the microwave to reheat!
To make 6 mini quiches:
Mix well:
3 eggs
3T milk
Add and stir well:
1T chopped onion
1T chives
2T chopped broccoli (or spinach, zucchini, etc)
1 T chopped green or red pepper
3 cherry tomatoes, diced
3T freshly grated sharp cheddar cheese
Salt and pepper
Bake in silicone cups at 350° for 20 min
Freeze and reheat in microwave.
Serves 2-3
I have served these for brunch and they are gobbled up quickly!
