We went "apple pickin" at Beak and Skiff Apple Orchards a few days ago - I have already made a few cakes; the Bundt cake was delish and the One Bowl cake is already in the freezer to take to Ohio next week! Here are 4 recipes to try in case you have lots of apples in your basket!!
Apple Bundt Cake Recipe
Made with finely chopped fresh apples, this Apple Bundt Cake Recipe is sure to please everyone. There is a delicious glaze and makes enough to feed a crowd!
I have been patiently waiting to make this delicious cake. I used a golden delicious apple and an ida red apple.
Ingredients
For the cake:
- 3 eggs
- 1 1/4 cups canola oil
- 2 cups Sugar
- 1 teaspoon vanilla
- 2 1/2 cups Flour
- 1 tablespoon Baking Powder
- 3/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large apples
Brown Sugar Glaze
- 4 tablespoons butter
- 1/2 cup brown sugar
- 1/3 cup Milk
Instructions
- Preheat oven to 350 degrees F.
- Finely chop the apples. You should have enough to equal about 2 cups. Set aside.
- In a separate bowl, sift together flour, baking powder, salt and cinnamon. Set aside.
- In the bowl of a standing mixer, or in a large mixing bowl with a hand mixer, combine eggs, oil, sugar and vanilla. Beat 2 minutes.
- In two batches, add the flour mixture to the egg/oil mixture beating well and scraping sides of the bowl between additions.
- With mixer on lowest speed, fold in the apples. Batter will be stiff but pourable
- Fold batter into prepared bundt pan. Bake for 55-60 minutes or until a knife inserted in center of cake comes out clean.
- Cool 10 minutes in pan. Put out onto cooling rack. Cool completely.
- While cake is cooling, prepare the glaze.
- Melt 4 tablespoons butter in a sauce pan. Add ½ cup brown sugar and whisk until mixed.
- Slowly drizzle in 1/3 cup milk while still whisking. Bring to a boil, stirring constantly. Boil for 4 – 5 minutes.
- Remove from heat and let cool. The glaze will thicken as it cools.
- Place cake (still on the cooling rack) on a large cookie sheet.
- Pour the glaze over the cake and let harden a bit before serving.
It is delicious and a perfect fall dessert!

One Bowl Apple Cake
Ingredients
2 eggs
1 3/4 c sugar
2 heaping teaspoons cinnamon
1/2 c oil
6 medium Gala, Fuji or Honey Crisp apples
2 c flour
2 teaspoons baking soda
Directions
Preheat oven to 350°. In a large bowl, mix the eggs, sugar, cinnamon and oil. peel and slice apples and add to mixture in the bowl, stirring each time. In a smaller bowl, mix together flour and baking soda. Slowly add dry mix to wet mix until all flour is absorbed by wet ingredients. Pour into a greased 9"x13" pan or two 9" round pans and bake for about 55 minutes. Optional: drizzle with icing.
