Roasted Cherry Tomatoes

A tasty and easy way to serve a side of tomatoes is to quickly roast them:


I simply cut cherry tomatoes in half, sprinkle with basil olive oil, a dash of Balsamic, some spicy seasoning, lemon pepper and salt, toss a bit and roast at 375' for about 10-15 min.  I added some crushed garlic and thinly sliced onions this time: 



After roasting, I sprinkle with ribbons of fresh basil:

  2. Oh, how I love tomatoes. And the best thing about this recipe is that cherry and grape tomatoes are so easily available in the store and the one kind of tomatoes that doesn't taste like styrofoam after tomato season! Thanks, Patti. I've roasted Romas often, but I like the idea of these little ones. And the steak seasoning is inspired!

  3. Most of the year I forget how amazing tomatoes are...they seem so flavorless... but, oh, end of summer tomatoes are so delicious. I’ll have to try this!
