Homemade Salsa....

With tomatoes in abundance at the market.....
....I had a craving for some fresh salsa - and here's how I make it:
- 2-3 medium sized fresh tomatoes (from 1 lb to 1 1/2 lb), stems removed, chopped
- 1/4 red onion, chopped
- 1 jalapeƱo chile (stems, ribs, seeds removed), less or more to taste, chopped
- Juice of 1/2 lime
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- few leaves of fresh oregano, chopped
- Small clove garlic, minced
Everything is tossed into the food processor and pulsed a bit (do not pureƩ)
(Serve with tortilla chips)
I have been known to toss fresh salsa on top of angel hair pasta for a quick lunch, add leftover salsa to homemade soup and even add it to a grilled cheese sandwich!!
OR
How about a little Bruschetta?
A little onion, tomato, garlic and parsley or basil....
Toast bagette slices and top with a spoonful for a tasty snack!
