This morning was chilly and I could tell the fall is not far away. This is my favorite time to can or freeze some foods for the winter.
I stopped at the Farm Stand and bought some fresh veggies...
...the tomatoes looked so ripe and juicy that I bought a basketful to make some sauce...
...I parboiled them to remove the skins...
...and threw them all in a pot with some onions, green peppers, sugar, lots of garlic, asiago and parmesan cheeses, and Italian herbs...
...I let it simmer for a few hours and then blended it to make it nice and smooth.
I made enough to can 4 jars with enough leftover for dinner tomorrow night!
My house smells so good!
I also made a few jars of raspberry/tomato jam (recipe here)...if you have never tried this, you would never guess it is made with tomatoes!!
...and pineapple-zucchini breads! (recipe here)
A very productive day!
I'm not one to eat tomatoes, but these images are gorgeous Your tomato sauce looks delicious. I do eat that! ;-)

ReplyDeleteI can't think of anything most tasty in the summer than fresh grown tomatoes. They are always on my counter! You did have a productive day, tomatoe sauce and baked bread. I was doing the same thing but I was putting fresh peas in the freezer. Love your photos, so pretty........
ReplyDeleteOh yum! Everything you made sounds so good. It is chilly here in the mornings and evenings so I am slowly getting into the mood of Fall. Baking is always a big part of Fall for me. Love your watercolor photos....I keep meaning to try that!

I am so envious of the cool weather and tomatoes that taste like tomatoes! Here in Fl it is going to be miserably hot another 2-3 months and there is never a tomato that tastes good!
