Stuffed chicken breast....

I made some delicious chicken the other night with "smashed potatoes" and spinach....

I seasoned and sautéed the chicken breasts, then sliced a pocket in them.  I filled the pocket with red peppers, sliced onions, slices of parmesan/cheddar cheese and spinach leaves.  Then I baked them for 40 - 45 minutes - YUM!
