Green and Blue tablesetting


One of my favorite colors is green.

Green is the color of growth, nature, and money.

Psychology of Color: Green

A calming color also that's very pleasing to the senses. Dark forest green is associated with terms like conservative, masculine and wealth. Hospitals use light green rooms because they too are found to be calming to patients. It is also the color associated with envy, good luck, generosity and fertility. It is the traditional color of peace, harmony, comfortable nurturing, support and well paced energy.

Zucchini and Tomatoes

Yes, another post on zucchini!
It is one of my favorite vegetables - and it can be prepared so many different ways!

Slice zucchini and tomatoes and line them up in a baking pan:
Melt 3 T butter and 2 chopped garlic gloves. Drizzle garlic butter over vegetables and bake for 40 minutes.

Add some mozzarella cheese and bake for a few more minutes until cheese melts:
Serve hot - so tasty!

Zucchini Corn Bread

Zucchini is in season and I can never get enough! This is a great recipe for corn bread - with zucchini added!

Zucchini Cornbread

Bake Time: 60 minutes

1 medium zucchini, grated
1½ cups all-purpose flour
¾ cup yellow cornmeal
½ cup granulated sugar
1 teaspoon baking powder
½ teaspoon baking soda
¾ teaspoon salt

½ cup unsalted butter, melted and cooled, 2 eggs, ½ cup buttermilk and a few drops of hot sauce

1. Preheat oven to 350'. Grease and flour a 8"x8"-inch baking dish.

2. Trim the ends off the zucchini and thinly slice 4 rounds from one end of the zucchini and reserve for garnish. Shred the remaining zucchini, toss with 1 tablespoon of granulated sugar and place in a colander. Allow to drain for 30 minutes, then press against the side of the colander to release as much moisture as possible

3. In a large bowl, whisk together the flour, sugar, cornmeal, baking powder, baking soda and salt.

4. In a medium bowl, mix the butter, eggs and buttermilk. Add hot sauce.

5. Gently stir the grated zucchini into the butter mixture. Pour the wet ingredients into the flour mixture and use a rubber spatula to gently fold together until no traces of flour remain. Pour the batter into the prepared baking pan and top with the 4 reserved zucchini slices.

6. Bake until the bread is golden brown and a tester inserted in the center comes out clean, about 1 hour. Let cool in the pan for 10 minutes. The bread can be stored at room temperature, wrapped in plastic wrap, for up to 3 days.


It is not only tasty, but pretty, too, with flecks of green throughout:

Pineapple-Zucchini Bread


I love quick breads. My favorite is Banana and my second favorite is Pineapple-Zucchini:
I could eat the whole loaf - that's why I make 2
This recipe makes 2 loaves.
RECIPE
Ingredients:
3 eggs
1c oil
2c sugar
1T vanilla
2c grated zucchini
1t baking powder
1 t salt
1t baking soda
1T cinnamon
3c flour
1c chopped walnut
8 oz can crushed pineapple, drained
Beat the first 4 ingredients with electric mixer. Add all other ingredients and mix by hand. Bake in one bundt pan (1 hr 20 min) or 2 loaf pans (1 hour) at 350'

And did I ever tell you the story of my glass cake dome?
Here goes: This is the smaller M-C pedestal cake platter. I have the larger one, too. One day I was at a garage sale and the older man was selling a huge cake platter and dome. After some flirting friendly chatter, I talked him into selling me just the dome. It was perfect and just the fit for the larger platter.
I made my husband a cake before I went to the Cape in the spring and covered the cake with the dome. He ate the cake and while he was washing the dome cover, he banged it against the granite counter top. It cracked in many places. Needless to say it took him a few days to 'fess up.

I have been looking for a new one and just couldn't find one as large. Recently Hobby Lobby had this small cover in their sale section, so I grabbed it.

The moral:
No more large desserts for hubby in this house!

My $.65 plate


Every Sunday, In Syracuse , NY, we have a flea market at the Regional Market. There are always hidden treasures and I have been lucky to find a few! This hand painted plate cost only $.65...that right, 65 CENTS!
Today I am having dinner for one out on the front porch. I am into a great book and each night after dinner, I plop myself on the love seat and read until dusk. So, tonight I can "read through dinner"!

My husband will be golfing, so I will have a quiet, simple dinner.
When I complete this book, I will have read all of Hilderbrand's books - and this one is GREAT!
All of her stories take place on the islands of Cape Cod and I truly live in each book as if I am there. These are great summer reads!
Sorry, there is no room to join me - and I wouldn't be great company with my nose in this book!

Zucchini Boats

Tonight I decided to use leftovers to create Zucchini Boats:
I had 1 zucchini, a little leftover broccoli and 1/2 bag of leftover rice:
I shredded 1/4 cup of Chipotle Cheddar Cheese:
I sliced the zucchini in 1/2 lengthwise and hollowed it out a bit. I mixed the rice, chopped broccoli, shredded cheese and filled the zucchini with the mixture. I sprinkled a bit of salt and pepper on it, baked it for about 40 minutes and then topped it with a little mozzarella.
MMmmmm...was this ever easy and tasty!

Happy Hour Slushy

Here's a light and refreshing slushy cocktail for a hot summer happy hour:
In the morning, mix 1 shot citrus vodka with 6 oz pineapple juice and 1 oz cranberry juice and freeze it in a small container.
At 4:00 pm, spoon it out and enjoy!
Plastic stemmed glasses from Crate and Barrel, spoon and napkins from Anthropologie.
