French Onion Chicken for 2

         FRENCH ONION CHICKEN






Ingredients
  • 2 onions, peeled and sliced
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1/4 tsp pepper
  • 1 tsp fresh lemon thyme
  • 1/8 t crushed red pepper flakes
  • 1/3 cup beef broth
  • 1 tbsp Balsamic Vinegar
  • 2 chicken Breasts, boneless skinless, cut in half
  • dash salt and lemon pepper
  • 3/4 - 1 cup mixed cheeses:  I used:  shredded Mozzarella Cheese,  Parmesan cheese, Romano Cheese and Asiago cheese
  • fresh lemon thyme sprigs for garnish


Instructions

  1. Preheat the oven to 400 degrees and spray a baking dish with cooking spray
  2. Add butter to a large skillet on med heat. Add in sliced onions and cook for 5-10 minutes, stirring occasionally, until caramelized.    Reduce the heat on the pan to low and add in the garlic, pepper, red pepper flakes and thyme and cook for another minute.  Stir in the beef broth and the balsamic vinegar and cook until the onions have a jam-like consistency, about 10 minutes.
  3. When onions are caramelized, place about 1/3 of the mixture into the bottom of the greased baking dish.   Place chicken on top of the onions and sprinkle with the salt and lemon pepper.
  4. Place remaining onions on top of the chicken along with the cheeses.
  5. Bake for 30 minutes (or until the chicken has a safe internal temperature of 165°.
  6. Garnish with fresh lemon thyme.

The aroma while cooking was amazing!


This was delish!
