Zucchini-Stuffing Casserole



This is the perfect side dish for pork, chicken or turkey.  You can adjust the vegetables, by adding a variety, but I like this combo as it is colorful and tasty.  But feel free to take some away and add celery, peas, green beans or corn!




Zucchini-Stuffing Casserole

1 Box Stove Top stuffing (chicken)

2-4 zucchini and/or summer squash

1 onion, sliced

1 cup grated carrots

8 oz sour cream

1 stick butter

1 can cream of chicken(or celery) soup


Directions:


Cut squash into chunks, and onion in slices,  and place in a 9x13" casserole dish. Microwave for 15 minutes.  Salt and pepper the squash.




Melt butter in large bowl and stir in grated carrots, sour cream and soup.  Add dry stuffing mix.  



Drain any water produced by squash and onion and combine with the soup/stuffing mixture.  Toss gently. Put mixture back into the 9X13" baking dish.
Bake for 30 minutes @ 350'.

  2. That does look good! I'm going to try this on the next round of menus (: Sounds like a filet of fish, or a pork chop or piece of chicken with it would make a perfect meal!

  3. Making this weekend!!’ Our garden is overblown with carrots,beets,broccoli,lettuce and turnips. I’m running out of prep ways. This will be perfect! Thanks....stay warm this weekend. Just saw y’all’s weather forecast! 66 degrees here tomorrow!
