With blueberries in abundance, my mouth was watering for some Lemon Blueberry Bread. This bread is so quick and easy to make:
Lemon Blueberry Bread
Cream together:
3/4 c sugar
1/4 c soft butter
2 eggs
grated peel of one lemon
In a separate bowl, stir together:
2 c flour
1 t salt
1 t baking powder
Add alternately and stir:
flour
3/4 c milk
Toss together:
1/2 c blueberries with 2T flour and add to mixture
Bake for 1 hour in a greased bread pan.
Mix:
2 T fresh lemon juice and 2 T sugar to make a glaze
Using a skewer, poke holes in the bread while hot and pour lemon glaze over the top
I am off to have another piece!
