Another Quick Idea for Happy Hour

One of my favorite summer snacks to have with Happy Hour is Bruschetta. Take a ripe tomato, chop it and drain. Add a little chopped onion and garlic, salt and pepper. And then I add fresh parsley and basil from my herb garden:
Toss it about and refrigerate for a few hours:
I rub butter and garlic on baguette slices and toast under the broiler for a few minutes:
Just delish:
And the drink of the day is a favorite of mine:
Pineapple Surprise: citrus vodka, pineapple juice and a splash of cranberry juice.

  3. OH, that is so funny that you found the exact same napkins!! Don't you love them? YUM!! I love bruschetta!! So wonderful that you were able to make most if it fresh from your own garden!!
    (I hear so many people pronounce that word wrong. Just in case anyone out there is reading your comments, Broo-skeh-tah, With a "k", not an "sh".)

  6. I love to puree black olives with a little salt and red wine vinegar to make a paste and smear on just before the tomatoes! Try it, you'll love it!
