I have said it before, I love quick breads!
Here is another one of my favorites, Lemon Zucchini Bread:
Lemon Zucchini Bread:
2 c flour
2 t baking powder
1/2 t salt
2 eggs
1/2 c oil
2/3 c sugar
1/2 buttermilk
The juice of 1 lemon
The zest of one lemon
1 cup grated zucchini
Oven: 350'
Grease 1 loaf pan
In a small bowl, mix together flour, baking powder and salt - set aside
In a large bowl beat eggs, oil, sugar, lemon juice and zest and buttermilk.
Slowly stir dry mix into wet mix until blended.
Stir in zucchini.
Pour batter into loaf pan and bake for 1 hour.
Mix together 2 T lemon juice and 2 T sugar to make a glaze - pour over as soon as bread comes out of oven.
