Baked Stuffed Tomatoes


Here's an easy side dish for lunch, dinner or an afternoon snack:

 
Here is all you need:




Baked Stuffed Tomatoes
  1. Hollow out 4 small tomatoes and turn them upside down on paper towels to drain
  2. Steam 1/8 tsp of minced garlic and 1 cup spinach to wilt; fill each tomato and sprinkle with Italian seasoning
  3. Grate a few tablespoons of cheddar cheese and top each tomato
  4. Bake at 400° for 8 minutes, garnish with chopped chives or basil
Hint: if your tomatoes roll around, slice a little of the bottom to help them sit steady!


These make a perfect summer side dish....


....or afternoon snack!
