I love to serve appetizers.
These are easy to make afternoon snacks, hors d'oeuvres, amuse bouche, little bites, noshes - whatever you want to call them!!
Here are a few of my favorites:
Corn Salsa
Ingredients:
15 ounce can Del Monte Southwest corn
1 lime, juice only
2T chopped fresh cilantro
1/2 medium red onion, diced
1-2 Roma tomato, diced
1/2 jalapeno, diced
2 T hot tomato oil (or salsa, or italian dressing)
Mix all together and refrigerate for an hour. Serve with Tortilla Chips
Spicy Sausage Balls
- 1 lb hot sausage, uncooked
- 1 (8-oz) cream cheese, softened
- 1 (10-oz) can mild Rotel diced tomatoes and green chilies, drained
- 1½ cups Bisquick
- 2 cups shredded cheddar cheese
Instructions:
- Preheat oven to 400ºF.
- Place all ingredients in a bowl and mix until well combined. Chill dough for an hour.
- Scoop sausage mixture into 1-inch balls and place on a parchment paper-lined baking sheet.
- Bake for 18 – 20 minutes, or until brown.

Baked Cheddar
What can you do with leftover cheddar cheese slices?
Sprinkle with a little seasoning and bake it on parchment paper for 20 minutes at 275° :

Cranberry, Apple and Onion Crostini
Spread Peppered Cranberry Jelly on crostini. Top each with a thin slice of apple, onion and some cheddar cheese. Broil to melt cheese

Cheesy Bruschetta :
Chop a few small tomatoes and drain juices. Add a minced garlic clove, a dash of EVOO, chopped basil parsley leaves, a dash of Italian seasoning and salt and pepper. Spread on crostini and top with grated cheddar cheese. Broil until cheese melts.
