Here's a quick and easy muffin to make to go with your pasta dinner. They are also a delicious side for soup or stew.
Cheesy Garlic and Chive Mini Muffins
Makes 20 mini muffins
1 cup flour
1T sugar
3/4 t baking powder
1/4 t baking soda
1/4 t salt
1/4 t cayenne pepper
3 T finely shredded Parmesan-Reggiano cheese
3 T chopped fresh chives
1 lg garlic clove minced
1/2 t It's Greek To Me seasoning (Flavor Seed see below)
1 egg
1/2 cup buttermilk
3 T melted butter
Spray a mini muffin pan with Pam. Preheat oven to 375°. Mix the first 6 ingredients in a small bowl. Mix the last 7 ingredients well in another bowl. Add the wet ingredients to the dry and stir until blended, it will appear to be lumpy. Use a 1" cookie scoop to fill each muffin cup. Bake for 12-14 minutes until an inserted toothpick comes out dry.

Cool for 5 min in pan and serve warm with Chive Butter (recipe below)
Chive Butter:Blend 1/2 stick of softened butter and 2-3 T of finely chopped chives, and add a dash of salt and pepper.
