Tomato Sauce
This time of year welcomes us with lots of homegrown tomatoes. I make lots of sauce and freeze it, but this is a quick and easy way to make it and serve it immediately! This serves two - perfect for us:
Fresh and Easy Tomato Sauce
6-8 lg Roma Tomatoes
1/4 bell pepper, cut into chunks
1/4 onion, cut into chunks
1 very small jalapeno pepper cut in 1/2 and seeded (optional)
2 cloves garlic
1 carrot, cut into chunks (optional)
Lay all on parchment paper on a cookie sheet and sprinkle with:
fresh basil and fresh oregano (about 1/4 cup)
salt and pepper
1T Sofrito seasoning (Trader Joes)
Drizzle with extra virgin olive oil
Bake in 250° oven for 2-3 hours.
Drop everything into a bowl and blend with an immersion blender and then toss onto cooked pasta.
After you blend it, you can add some fresh parmesan cheese and stir in.
Just enough for two!
Do you know how to make a Pasta Birdnest? Add a little melted butter and parmesan cheese to the pasta, stir well, use a large fork and swirl and swirl a serving of pasta into a small bowl (like a Kitori bowl). Gently dump onto a pasta bowl or dinner plate and top with sauce. This leaves some space for a slice of crusty garlic bread!
I also like to make traditional sauce, tomato juice, salsa and gazpacho while tomatoes are in season!.
