Banana-Zucchini Bread




Quick breads are so easy to make - this recipe is a simple one, and it makes 2 loaves!  Be creative and add grated apple, or some crushed pineapple...all it needs is 2 cups of the fruit or vegetable!




Banana-Zucchini Bread

Ingredients:

3 eggs

1 c oil

2 1/4 c sugar

1 T vanilla

1 1/2 c grated zucchini

1/2 cup mashed banana

3 c flour

1 t baking soda

1/4 t baking powder

1 T cinnamon

1 T salt

Directions: 

Beat eggs and oil until combined.  Add sugar, vanilla, zucchini and banana, mix well. In a separate bowl combine flour, baking soda, baking powder, cinnamon and salt.  Slowly stir into wet ingredients.   Divide batter between two lightly greased bread pans.  Bake for one hour at 350°.


They can be baked in a silicone mold or a glass, aluminum or enamel bread pan:
