Here's an easy COPY CAT recipe for Carrot Cake cookies:
Crumbl Cookies are large with lots of frosting, so only 5 fit on a cookie sheet:
If you are not familiar with Crumbl Cookies, they are HUGE and they offer 6 classic cookies plus 4 new rotating flavors weekly.
Carrot Cake Cookies
1 c salted butter
3/4 c packed brown sugar
1/2 c sugar
1 1/2 t baking powder
1 t cinnamon
1/2 t baking soda
1/2 t salt
1/2 t ginger
1/2 t allspice
1 egg
2 T milk
1 T vanilla
2 3/4 c flour
1 c finely shredded carrots (use fine shredder)
Cream Cheese frosting and chopped walnuts or pecans
Oven to 350° Line cookie sheets with parchement paper
In large bowl beat butter, add sugars, baking powder, cinnamon, baking soda, salt, ginger and allspice. Add egg, milk and vanilla. Beat in flour. Stir in carrots.
Use a 1/3 cup to drop cookie dough onto sheet, flatten to 3/4" and 3" diameter. Leave 2" between each cookie. Bake 14 minutes (til edges are lightly browned). Cool 2 min and remove to cooling rack.
Spoon cream cheese frosting into piping bag with round tip and pipe each cookie in a spiral motion. Sprinkle with nuts. Makes 10 large cookies.

ReplyDeleteOooh, now this is interesting. I love carrot cake, but I’ve never had it in cookie form. There is a Crumbl cookie about 2 miles from my house and I have never been there. I have quite a few of their copycat recipes, so I tend to just make cookies at home. Maybe I should wander up next week and see what they have, and try not to succumb too badly.
