Bacon-Jalapeno Jam
1/2 lb bacon
1 medium yellow onion, finely diced
1 medium jalapeno peppers, seeded and diced
1 teaspoons garlic, minced
1/4 cup light brown sugar, packed
1 1/2 T apple cider vinegar
2 T maple syrup
1T dijon mustard
1/2 teaspoon chili powder
In a medium skillet over medium heat, cook bacon until crispy. While the bacon is cooking, line a plate with a paper towel.
Once the bacon is done, place onto the lined plate. Set aside.
Leave a few tablespoons of bacon grease in the pan and add 2 T butter,
To the pan, add the onion and jalapenos. Reduce the heat to low. Cook until the onions are caramelized, 15-20 minutes, stirring often.
Mix in the garlic, brown sugar, apple cider vinegar, maple syrup, mustard, chili powder, and bacon.
Allow the mixture to simmer for 7-10 minutes, or until it thickens to the consistency of jam.
Serve warm or cold. You may want to warm slightly if it has been refrigerated.
Try it drizzled on top of cheese and crackers:
Brush baguette slices with olive oil and seasonings and add a piece of cheddar cheese. Broil until cheese melts and edges of bread are golden. Drizzle warm jam on top and serve:
Other ways to serve it:
Spread onto Triscuits, Baguette slices, cheese
On top of cooked pork, burgers, eggs or chicken
Add a little to your mayonnaise on a sandwich
Mix into meatloaf
