Some easy dinner recipes I have tried lately....

Chicken-Stuffing Casserole

I found this recipe on the box of Stove Top Chicken Stuffing Mix.  It was easy, tasty and quick to make.  I altered the recipe a bit by adding cooked turkey breast, spicy seasonings and fresh basil.  I will make it again!

This is a quick and easy lunch or dinner to prepare.

  
This recipe serves two but can be doubled or tripled easily:


Chicken Parmesan Pockets
1 boneless chicken breast (diced)
1T olive oil
1 clove garlic
1 can refrigerated crescent rolls
3/4 c mozzarella cheese and (2 T set aside)
3/4 c spaghetti sauce

Preheat oven to 375'. Line a baking sheet with parchment paper and set aside.

Saute chicken in oil and cook 6-8 minutes, adding chopped garlic clove during last 2 minutes. Reduce heat and add sauce to chicken, stir until sauce is heated through.  Remove from heat.

Working on the parchment paper, separate crescent dough into 2 long rectangles and press together seams and flatten.  Spread 1/2 the chicken on 1/2 of the dough of one long rectangle and sprinkle with half of the mozzarella.  Repeat with the other rectangle.  Fold the dough over the chicken and seal the edges.  Sprinkle remaining cheese on top of dough.

Bake for 14-17 min until golden brown.


This is also a perfect way to use up leftover chicken or turkey!!

This was something I just threw in a pot and it was delish!  I love soups and never follow a recipe!

We like to have pizza now and then so I made some mini pizzas with Grands Biscuits:


I just flattened each biscuit, spread on some pizza sauce, peppers, onions and pepperoni and then covered with Mozzarella Cheese:


They were delish!


I tried a new Chili recipe....It was pretty good!

Valentine Dinner Table Setting...


The dining room table is set for a dinner for two....


...salad, steak, roasted potatoes....


....and chocolate cake for dessert!


I am using a mixture of dishes, 2 heart shaped, one for salad and the other for dessert....


....the hand painted floral dishes are from an unknown artist and I have slowly gathered a nice collection!


The napkins are tucked into my hand made napkin rings and placed in my hand painted wine glasses:

Happy Chinese New Year!

Chinese New Year, also known as Lunar New Year or Spring Festival, is China's most important festival. It is time for families to be together and a week of an official public holiday.

Chinese New Year 2021 falls on Friday, February 12, 2021, beginning a year of the Ox. China's public holiday will be February 11–17, 2021.

My mom had these wooden napkin rings and I decided to play with them for dinner tonight:



There are a variety of folds for both the man and the woman ring!

A quick Valentine favor...

While looking through my craft file, I came across this cute heart shaped paper craft:



It is a simple paper fold created with a square of paper and it can be made with any sized sheet of paper.  I chose a scrap book sheet of paper with a heart design and filled the 2 cups with Hershey Kisses:


Here are the directions:


The heart shape appears any way you display it....


....and you can fill it with treats or a little gift !

10 on the 10th - An easy craft you can do with your kids...

                   Crafting a Bird House


This is an easy craft you can do with children and you only need a few supplies:


Take any size can and wrap it in decorative paper using glue, Mod Podge or adhesive spray.  Use rubber bands to hold in place until glue dries:


Cut a piece of jute or rope about 2' long and center it and glue it lengthwise on the can:


Wrap each end of the can with  more of the jute or rope...


...wrapping about 3 times around...


....and glue in place:


Tie the ends of the long piece of jute to make a hanger:


Fill with bird seed and hang on a tree:


Young children will enjoy watching to see who comes to their cute little birdhouse!


An easy peasy craft for any age which cost nearly nothing to create!  I was lucky to have all the craft supplies on hand.

When you do this with children, you will also have the opportunity to discuss how bird feeding is most helpful at times when birds need the most energy, such as during temperature extremes, migration, and in late winter or early spring, when natural seed sources are depleted.

Valentine Luncheon...

The table is set for an early Valentine lunch....


...for John and I ....


...a simple salad and quiche...


...with sparkling lemonade...


...and cute napkins folded like hearts...


...with one simple rose in the center of the table...


...and a few candy kisses for dessert!



The napkin fold is easy and can be done with paper napkins, too:


My mom gave me this book about 30 years ago and it is my "go-to" whenever I use fabric napkins!


However you set the table, enjoy your Valentines Day!
